Easy Eggs on Toast

Ingredients

  1. 2 large eggs
  2. 2 slices bread (gluten free if needed)
  3. Softened butter (for spreading)
  4. Sliced aged cheddar cheese (about 4 slices, depending on size)
  5. Microgreens or sprouts (for garnish)
  6. Flaky sea salt (to taste)
  7. Black pepper (to taste)
  8. Basil herbs (to taste)

Instructions

  1. Boil eggs: Bring a small saucepan of water to a boil. Gently lower eggs into water, reduce to a simmer. Cook for 6 to 8 minutes (or your desired doneness). Transfer eggs to a bowl of ice water to stop cooking.
  2. Make toast: Toast, then butter bread. Spread cheese on top.
  3. Assemble: Peel eggs. Place an egg on each toast, then cut into slices. Garnish with microgreens, salt, black pepper, and basil herbs.

Mushroom Omelette

Ingredients

  1. 1 teaspoon butter
  2. 3 eggs
  3. 1 tablespoon olive oil
  4. 1 handful fresh microgreens, plus more for garnish
  5. 1/4 lb 110 g edible mushrooms
  6. salt and pepper to taste
  7. Basil herbs (to taste)

Instructions

  1. Heat grill to medium high.
  2. Brush mushroom with olive oil and grill, turning every couple of minutes, for 4-5 minutes. Allow to cool, chop coarsely and set aside.
  3. In a large skillet, heat butter over medium-high heat.
  4. Whisk eggs, salt, and pepper in a bowl and add to skillet; cook, stirring occasionally, until large curds form, 3-4 minutes, then gently stir until eggs are almost set.
  5. Using a rubber spatula, pat eggs into an even layer.
  6. Add microgreens, basil herbs and mushrooms to top of one half of the omelette.
  7. Slide half the omelette onto a plate and using a spatula, fold remaining omelette over the filling; garnish with additional microgreens.

Microgreens Dosa

Ingredients

  1. Dosa batter
  2. Mixed microgreens (such as spinach, pak choi, broccoli and coriander)
  3. Grated coconut
  4. Green chilies
  5. Cumin seeds
  6. Salt to taste
  7. Ghee or oil for cooking

Instructions

  1. Put the grated coconut, cumin seeds, green chilies, mixed microgreens, and salt in a blender. Blend into a smooth paste.
  2. After preheating, lightly oil or ghee-coat a dosa tawa.
  3. Pour a ladleful of dosa batter onto the tawa and spread it in a circular motion to form a thin pancake.
  4. On top of the dosa evenly spread a spoonful of the microgreens-coconut paste.
  5. Cook until the dosa turns golden and crisp.
  6. Flip the dosa and cook for a few more seconds.
  7. This microgreens dosa makes a tasty South Indian breakfast or snack when served fresh with chutney or sambar.

Microgreens Paneer Paratha

Ingredients

  1. Whole wheat flour dough
  2. Mixed microgreens (such as pak choi, spinach, coriander etc.)
  3. Grated paneer
  4. Chopped green chilies
  5. Chopped onions
  6. Garam masala
  7. Salt to taste
  8. Ghee or oil for cooking

Instructions

  1. Divide the whole wheat flour dough into small balls and roll out each ball into a small circle.
  2. Combine the mixed microgreens, grated paneer, chopped green chilies, chopped onions, garam masala, and salt.
  3. Place a spoonful of the microgreens-paneer mixture in the centre of each rolled-out dough circle.
  4. Fold the edges of the dough to enclose the filling and roll it out again into a paratha.
  5. Heat a pan and cook the microgreens-paneer paratha on both sides until golden brown, applying ghee or oil as needed.
  6. Serve the hot microgreens-paneer paratha with yoghurt, pickle, or a side of green chutney for a delicious and wholesome meal.

Microgreens Stuffed Potato Tikki

Ingredients

  1. Boiled and mashed potatoes
  2. Mixed microgreens (such as spinach, coriander, red cabbage etc.)
  3. Grated paneer
  4. Chopped green chilies
  5. Chopped cilantro
  6. Garam masala
  7. Salt to taste
  8. Bread crumbs (optional, for coating)
  9. Ghee or oil for cooking

Instructions

  1. Combine the mashed potatoes, mixed microgreens, grated paneer, chopped green chilies, cilantro, garam masala, and salt. Mix well to form a uniform mixture.
  2. Divide the mixture into small portions and shape them into round patties.
  3. If desired, coat each tikki with bread crumbs for extra crispiness.
  4. Heat ghee or oil in a pan and shallow fry the microgreens stuffed potato tikkis until golden brown and crispy on both sides.
  5. Drain excess oil on paper towels.
  6. Serve the hot and crispy microgreens stuffed potato tikkis with mint chutney or ketchup as a delightful appetiser or snack.

Green Power Smoothie

Ingredients

  1. Handful of mixed microgreens (such as kale, spinach, and arugula)
  2. 1 ripe banana
  3. 1/2 cup chopped pineapple
  4. 1/2 cup chopped cucumber
  5. 1/2 cup coconut water or water
  6. 1 tablespoon chia seeds (optional)
  7. Honey or maple syrup to taste

Instructions

  1. In a blender, combine the mixed microgreens, ripe banana, chopped pineapple, chopped cucumber, coconut water (or water), and chia seeds.
  2. Blend until smooth and creamy.
  3. Taste the smoothie and add honey or maple syrup if desired for extra sweetness.
  4. Pour the green power smoothie into glasses and enjoy immediately for a refreshing and nutrient-packed drink.

Berry Blast Microgreens Smoothie

Ingredients

  1. Handful of mixed microgreens (such as beet greens, sunflower sprouts, and radish microgreens)
  2. 1/2 cup mixed berries (such as strawberries, blueberries, and raspberries)
  3. 1/2 ripe avocado
  4. 1 tablespoon Greek yogurt or coconut yogurt (optional)
  5. 1 cup almond milk or any milk of your choice
  6. 1 tablespoon honey or agave syrup (optional)

Instructions

  1. In a blender, combine the mixed microgreens, mixed berries, ripe avocado, Greek yoghurt, almond milk, and honey or agave syrup.
  2. Blend until smooth and creamy.
  3. Taste the smoothie and adjust sweetness if needed.
  4. Pour the berry blast microgreens smoothie into glasses and serve immediately for a colourful and nutritious treat.
